Kale, Black Bean and Sweet Potato Tortilla Casserole


I love sweet potato and mexican food. I also love it when friends pass along yummy recipes. My friend Annie sent me the link to this recipe because know knew I'd love it! I has just about everything I love to eat (kale, beans, corn, sweet potato). It's easy to make which also makes it a big winner. I've made it three times now and can't wait to eat it again. The only change I've made is that I don't use enchilada sauce. I just don't like that stuff so I used salsa instead. Give it a go and let me know how it goes.

Weekender: Cupcake Decor Class








This morning my friend Tamara and I took a cupcake decorating class at Bakersville. It was a lot of fun and I learned a lot. I can see myself decorating my next batch of cupcakes using some of the skills I learned today. My favourite are the snowman, Tiffany bow and the roses.

Banana Coconut Pancakes

I started off my Sunday with some banana coconut pancakes. I never make pancakes but just felt like it today. I used a basic recipe and added some diced banana and dried, sugarless coconut. Really yummy and the perfect way to start off the day.

Weekend Exploration: Merchants of Green Coffee









This past Sunday the fiance and I were out exploring in Riverdale. We both love this neighbourhood for its diverse cafe's, boutiques and parks You can often find us in Riverdale on the weekend riding our bikes, sitting in a cafe or having brunch. This past Sunday was a rainy day but we still felt like getting out for a walk and exploring. We came across Merchants of Green Coffee and took a peak. I love this space for it's high ceilings and its laid back atmosphere. There is plenty of seating for reading and chatting. The cafe offers a great selection of certified green arabica coffees. I helped myself to some of the Papua New Guinuea beans, got caught in the rain on the way home (we forgot our umbrellas) and made a cup of jo asap. The coffee was really tasty and I'm looking forward to trying some of their other beans and of course another weekend of exploring my city.

Currie Quinoa and Asparagus Salad

I made this quinoa salad for lunches last week and it was awesome! I love currie and this recipe had the right amount of it. It also has so many healthy yummy things in it like apples, cranberries, chickpeas and asparagus. I'll definitely be making this one often.

I hope you all had a lovely Mother's Day. The fiance and I spend ours with both our families (unfortunately minus my brother who is away at work). We had a brunch at our place and enjoyed each other's company. We are both lucky to have such lovely friends and family. I feel so blessed.

Morning Glory


I got inspired to make these yummy morning glory muffins at around 9pm last night. I'm always looking for new things to eat for breakfast and although I don't normally gravitate towards muffins, these looked both yummy and healthy. I have never made morning glory muffins before and will definitely be making these ones again. I love that they have apple, coconut and carrots in them. What a lovely way to start the day :)

Weekender....

Another weekend has come and gone! Here are some pics of what I was up to ...

the Magic Bullet.

I hope you all had an easy Monday back at work. I had a busy but good day and enjoyed my morning walk to work. I'm hoping for no rain tomorrow.

Sweet Tooth




Not sure if any of you have a sweet tooth like me!? I love sugar and feel like I can't live without it. I know how bad it is for me but a little bit here and there is okay. I've definitely cut back on my sugar intake and am enjoying things like dark chocolate now. Two of my fave sweets are macaroons and Cadbury Minieggs. The are also both very pretty ;)

It's an antipasto kinda night~




On my way home today I stopped by the market and was inspired to go straight home and whip up some antipasto. I love antipasto and just realized that even though I don't often make an antipasto plate I eat the various components of my typical antipasto plate a few times a week. I love olives and tomatoes with olive oil! There's no better way to start off a meal!

Friday Night at the Market Kitchen









Last night I took the fiance to the Market Kitchen for a cooking class. It was a seafood class and on the menu were fish cakes, steamed clams in white wine with choriso, arctic char with veg confetti and a lemony pudding cake. The food was amazing and the Market Kitchen is so beautiful! It overlooks the St. Lawrence Market and has huge windows. We both had a lovely time and met some lovely people. I now have the food class bug!

Christmas Baking

I hope you all had a wonderful Christmas/holidays!! It went by so quickly and I can't believe I am already back at work and back to "normal" life. I had a lot of fun with family this past Christmas. We did some baking ...

We went to visit family on Boxing Day and ended up having to drive back in a snow storm. It took us twice as long to get home but it was all worth it AND the snow is really pretty. We haven't really had snow in Toronto for I think two winter's now so I'm enjoying it.
