Currie Quinoa and Asparagus Salad

I made this quinoa salad for lunches last week and it was awesome! I love currie and this recipe had the right amount of it. It also has so many healthy yummy things in it like apples, cranberries, chickpeas and asparagus. I'll definitely be making this one often.

I hope you all had a lovely Mother's Day. The fiance and I spend ours with both our families (unfortunately minus my brother who is away at work). We had a brunch at our place and enjoyed each other's company. We are both lucky to have such lovely friends and family. I feel so blessed.

Peplum and Swings




Yesterday I had lunch in Trinity Bellwoods Park with a friend. It was a lovely day so we took some pics. Here I am wearing my new fave shirt. I love the peplum trend and have been eager to try it. I don't have the flattest stomach and find that peplum can be quite flattering on many women. I thought it looked weird on me at first but now I love it. 

Have you guys seen the new swings literally hanging from the trees in the park? I love them! I spent some time there after work on Tuesday as well, just swinging ... and swinging ... looking up at the sky. I could have stayed there forever ... sigh.

Avocado Spinach Egg Salad

I made this avocado spinach egg salad last Thursday for dinner. I was feeling lazy and tired after hitting the gym and wanted to make something fast and simple. It was yummy and made a great lunch the next day. An added bonus is that it calls for yogurt and avocado instead of mayo. I added a bit of cumin for some tang. Enjoy!

Bodybuilder Broccoli Salad

This past Christmas, my aunt introduced me to this lovely Bodybuilder Broccoli Salad. I think she got the recipe from a friend who got it from a friend. Needless to say, the recipe has probably been tweeked several times. I fell in love with it the first time I ate it and continue to make a big bowl of it for lunches every week. It's so tasty I am yet to get bored of it! Who knew broccoli could be so good? It's also a great way to get your veggies.

RECIPE

3 bunches broccoli florets
1/2 cup of sliced red onion
1/2 cup of toasted almonds
1/2 cup of dried cranberries
1/2 cup of crumbed feta cheese

dressing 
1/2 cup of plain yogurt 
1/4 cup of mayo
1 tbsp lemon juice
salt and pepper to taste
Voila!

Go make this now! Trust me, it's delicious.
