Kale, Black Bean and Sweet Potato Tortilla Casserole


I love sweet potato and mexican food. I also love it when friends pass along yummy recipes. My friend Annie sent me the link to this recipe because know knew I'd love it! I has just about everything I love to eat (kale, beans, corn, sweet potato). It's easy to make which also makes it a big winner. I've made it three times now and can't wait to eat it again. The only change I've made is that I don't use enchilada sauce. I just don't like that stuff so I used salsa instead. Give it a go and let me know how it goes.

Banana Coconut Pancakes

I started off my Sunday with some banana coconut pancakes. I never make pancakes but just felt like it today. I used a basic recipe and added some diced banana and dried, sugarless coconut. Really yummy and the perfect way to start off the day.

Cranberry and Nuts Baked Brie






I recently made this cranberry and nuts baked brie. I was grocery shopping, saw the brie and just decided I was going to make this on a whim! I realize it's often thought of as more of a holiday appetizer but who cares. I semi followed this recipe. It was really easy to make and our house smelled like heaven. I used walnut and pecans and ate it with some whole grain bread. It was delicious!

Kale Chips Are Yum!

I love kale chips because they are salty and crispy just like potato chips but are healthier. However, this doesn't mean that I am willing to pay over $5 for a fairly small bag at the health food store. Instead I followed this recipe. The only change I'd make is to add the salt after the chips come out of the oven. Salt draws out water and can leave you with soggy kale chips which sucks! I also added some garlic.

Go make kale chips now! Trust me, they are delicious.

Fajita Wednesday (and Tuesday)

Lately I have been eating a lot of Mexican food. I was inspired by a cooking show I saw on Tuesday afternoon. When I realized that I had most of the ingredients for making fajitas I made them as soon as I got home. They are so tasty and easy to make. I put avocado, parsley, onion, cheddar cheese, tomatoes, red and green peppers and of course hot sauce. I also used Old El Paso seasoning mix (I know... not so healthy but what the heck). I must admit that I had fajitas for dinner on Tuesday and Wednesday night! I love Mexican food and wish that Toronto had more and better Mexican restaurants. I have discovered a few good places for Mexican but am always on the hunt for more.

Chocolate Orange Cream Cheese Pound Cake

I recently discovered Joy the Baker and am loving her creative and tasty recipes. I made this Chocolate Cream Cheese Pound Cake the other night and am loving it. I love the combination of chocolate and orange and have been enjoying this treat with an afternoon cup of tea.
