Fajita Wednesday (and Tuesday)

Lately I have been eating a lot of Mexican food. I was inspired by a cooking show I saw on Tuesday afternoon. When I realized that I had most of the ingredients for making fajitas I made them as soon as I got home. They are so tasty and easy to make. I put avocado, parsley, onion, cheddar cheese, tomatoes, red and green peppers and of course hot sauce. I also used Old El Paso seasoning mix (I know... not so healthy but what the heck). I must admit that I had fajitas for dinner on Tuesday and Wednesday night! I love Mexican food and wish that Toronto had more and better Mexican restaurants. I have discovered a few good places for Mexican but am always on the hunt for more.

Mmm... I love Mexican food but have never attempted to make it. Not really sure how, but your explanation seems pretty simple. The best Mexican food I ever had was recently in Arizona -- real authentic stuff with ingredients I'd never heard of.
